Ingredients
For the vegetables
- 2 eggplants
- 6 sweet red peppers
- 5 sweet yellow peppers
- 1 cups PJ KABOS, "Family Reserve Organic - Robust" Extra Virgin Olive Oil
- 1 onion
- 2 medium carrots
- 1 pinch of saffron
For the base
- 700 grams chicken thighs or breast, skinless
- ½ cup PJ KABOS, "Family Reserve Organic - Robust" Extra Virgin Olive Oil
- 1½ cup rice; Basmati, rinsed
- 1 liter homemade chicken broth (previously prepared) or just water
- Salt, to taste
- Pepper, to taste
For garnish
- Fresh herbs, optional
- Garlic cloves with skin, optional

Preparation
For the vegetables:
Preheat the oven to 220°C (428°F) fan assisted.
1) Slice the eggplants.

2) Place the eggplants and whole peppers on a baking sheet. Pour ½ cup of PJ KABOS, "Family Reserve Organic - Robust" Extra Virgin Olive Oil over the vegetables. Roast in the oven about 25-30 minutes.

For the Base
3) While the vegetables are roasting, finely chop the onion and carrots.
In a large pan, heat ½ cup of PJ KABOS, "Family Reserve Organic - Robust" Extra Virgin Olive Oil over medium heat. Sauté the onion and carrots until they turn golden brown.

4) In a large skillet, heat ½ cup of olive oil over high heat. Sear the chicken pieces until they develop a golden crust.

5) Add the sautéed onions and carrots to the skillet with the chicken. Cook until done, approximately 30 to 40 minutes, adding just a little bit of water if needed.

Handling the Roasted Vegetables:
6) Roast until the peppers have a few blackened spots.

7) Cover with foil. After resting the vegetables under foil for 15 minutes, remove their skin.

8) Chop the skinless eggplants and peppers finely. Set aside. Add the rinsed rice to the skillet.

9) Add a pinch of saffron, and homemade chicken broth (or water) to the skillet.

10) Mix in the roasted peppers, eggplants, and garlic cloves (with skin on).
Season with salt and pepper to taste.
Cover the skillet and cook over low heat for about 15 minutes, without stirring, until the rice is fully cooked and has absorbed all the liquid.

Serving:
11) Fluff the pilaf with a fork. Garnish with fresh herbs if desired. Serve hot and enjoy!
