Preparation 

For the vegetables:

Preheat the oven to 220°C (428°F) fan assisted.

1) Slice the eggplants.

1) Fresh eggplants should feel heavy and have smooth, unwrinkled skin.

2) Place the eggplants and whole peppers on a baking sheet. Pour ½ cup of PJ KABOS, "Family Reserve Organic - Robust" Extra Virgin Olive Oil over the vegetables. Roast in the oven about 25-30 minutes.

2) Roasting concentrates flavor—especially when paired with high-quality EVOO.

For the Base

3) While the vegetables are roasting, finely chop the onion and carrots.

In a large pan, heat ½ cup of PJ KABOS, "Family Reserve Organic - Robust" Extra Virgin Olive Oil over medium heat. Sauté the onion and carrots until they turn golden brown.

3) Robust olive oil handles the heat well and draws out rich, savory notes.

4) In a large skillet, heat ½ cup of olive oil over high heat. Sear the chicken pieces until they develop a golden crust.

4) Let it sizzle—don’t rush the sear.

5) Add the sautéed onions and carrots to the skillet with the chicken. Cook until done, approximately 30 to 40 minutes, adding just a little bit of water if needed.

Handling the Roasted Vegetables:

6) Roast until the peppers have a few blackened spots.

7) Cover with foil. After resting the vegetables under foil for 15 minutes, remove their skin.

7) Steaming the hot roasted peppers under the foil loosens the skins and make them easier to remove. It is the secret to silky, peel-free eggplants and peppers.

8) Chop the skinless eggplants and peppers finely. Set aside. Add the rinsed rice to the skillet.

9) Add a pinch of saffron, and homemade chicken broth (or water) to the skillet.

9) With all the flavors—olive oil, vegetables, and chicken—if you don't have homemade broth, water will do just fine.

10) Mix in the roasted peppers, eggplants, and garlic cloves (with skin on).

Season with salt and pepper to taste.

Cover the skillet and cook over low heat for about 15 minutes, without stirring, until the rice is fully cooked and has absorbed all the liquid.

10) Hands off now—the final 15 minutes is all about gentle heat and patience. Go make yourself a cup of coffee and let the amazing rice do its thing, soak up all those flavors.

Serving:

11) Fluff the pilaf with a fork. Garnish with fresh herbs if desired. Serve hot and enjoy!
